What is a FODMAP and why should I care?

FODMAPS are Fermentable Oligo-saccharides Di-saccharides Mono- saccharides and Polyols – otherwise known as Fructans.

Grains are high in fructans which studies have shown can cause irritation in the bowels leading to a variety of symptoms including bloating and gas.

The slow fermentation process of real sourdough reduces the level of these nasty little troublemakers.

A study by Monash University showed the reduction from high to low FODMAP when flour is fermented through the process of making real sourdough bread.
